IN THE KITCHEN :: summer berry galette

With the unofficial start to summer a mere days away we’re in full board summer spirit. It’s been a whirlwind three weeks since the birth of our beautiful little Ava and now, more than ever, we’re savoring the little things and new traditions. We are positively smitten with our little baby and can’t wait to celebrate each season and milestone with even more pizzazz and fun than our norm. It’s amazing how differently we see the world now!

So in celebration of all things sweet and a fun and memorable summer on the horizon, we’re kicking off our #summerdessertweek on Lifestyle featuring fresh and delicious seasonal desserts that can be made effortlessly with just a few ingredients and steps. Our first recipe reminds us of the wholesomeness of summer – in Seattle it’s berry season and memories of cobblers, hand pies and shortcakes swirl through our minds as we celebrate the bounty from our surroundings. Berry galettes {or casual pies, as we like to call them} are a quintessential summer dessert and can be made in advance to a dinner party, pack up nicely as hostess gifts and can be made with any berry or fruit you desire.

1/2 lb. washed blueberries || 1/2 lb. washed and cut strawberries || two pre-made pie crusts || 2 tbs.  lemon juice || 1/4 cup sugar || 3 tbs. flour

Preheat oven to 425. Lay out a baking sheet lined with parchment paper or foil and cut pie crusts into 6 smaller rounds – reforming the dough if needed.

Mix the berries with the lemon juice, sugar and flour in a mixing bowl. Place heaping amounts of the berry mixture atop the pie rounds pinching up the sides of the dough to hold in the mixture and forming partial pies.

Bake for about 20-25 minutes, or until the filling is bubbling and the pie crust is golden brown. **If you have a finicky oven wrap foil around the edges of the pie crust for the first 10 minutes to avoid burning.

Let the galettes rest for a few minutes and serve warm with vanilla ice cream.
