IN THE KITCHEN :: Raspberry Lemon Cream Parfait

We seem to be on a bit of a sweet tooth roll these days at Valley & Co. HQ! Our blueberry and lemon tart recipe was a delicious hit so we hope you enjoy this raspberry lemon cream parfait delight just as much. It’s a wonderful recipe for Easter or springtime celebrations as you can assemble them before a get together and they’ll stay fresh. ingredients3

To make four parfaits :: four crushed graham crackers || 8 oz. whipping cream || 1 cup mascerated raspberries || 4 Tbs. sugar || 12 oz. fresh lemon curd {we like this Ina Garten recipe} or jarred lemon curd || 1/3 cup of water

Lemon Raspberry Cream Parfait Lemon Raspberry Cream Parfait

Gently crush graham crackers in a ZipLoc bag and set aside. Take your raspberries, sugar and water and slowly heat up in a sauce pan on medium heat until the raspberries gently start to soften. Strain and set aside.

Add graham crackers to the bottom of a parfait dish and top with 3 oz. lemon curd.

Add 2 oz. whipping cream and top with remaining graham crackers.

Top with raspberries.
