Balsamic-Dipped Watermelon Bites

We made it! Happy holiday weekend! What’s on your agenda? We’re not quite sure what to do with ourselves…we have a rare holiday weekend free and without an event. Sure, we’ll be firing up the grill and enjoying some beach walks {though it’s drizzling and chilly on the coast right now}, but what else should we do?…

Whatever you plan to do, we invite you to try out some scrumptiousness we whipped up. Just for you. Yep.

Earlier this month the gorgeous new issue of RUE Magazine was unveiled and we had a cameo {pgs. 52-53}! We were invited to create a cocktail recipe with a tasty new spirit, RHUBY, along with an appetizer. So we created two recipes and three tasty bites and we’re sharing the recipes – stay tuned for the out-of-this-world cocktail recipes next week. We joined forces with the amazing Noa Azoulay-Sclater / Feather love Photography and had a blast. Thanks to RUE {and Anne Sage} for having us and to Noa for the beautiful images!

Balsamic-Dipped Watermelon Bites
Ingredients: watermelon | 1 container of small mozzarella pearls | basil | good balsamic vinegar | sea salt
Cut the watermelon into bite-sized cubes. Cut the basil into threads by rolling into a cigar-shape and slicing thinly.
Skewer the mozzarella pearls on top of the watermelon cubes. Take the cube and dip it into 1/4″ of balsamic vinegar, leaving for 30 seconds, or until it’s soaked in.
Top with basil and a crack of sea salt. Serve immediately or place in the refrigerator, covered, for up to a few hours.
