Make it at Home: Goat Cheese Rounds

Monday, Monday. Isn’t there a song that sings that tune? Well, Monday has arrived in all its glory. Our weekend was jam-packed with goodness prepping for client holiday events and working on our To Do List, whilst enjoying the non-stop Christmas radio station, nibbling on cookies, watching It’s a Wonderful Life, andspending time with family. It’s all about enjoying the small moments, isnt’ it?

We’re also mapping out our own holiday celebrations, as we’re sure many of you are, and what the entertaining repertoire is to include. We always have some steadies: good wine and beer and sparkling water, an eclectic holiday play list, and delicious unexpected food. Paired with festive decor and good company, you have the perfect celebration. You know we’re also about sharing our “musts” with you. This holiday season pre-make our Chive- and Spiced Candied Walnut Goat Cheese Rounds and serve them on a silver tray as you greet your guests. Talk about the perfect festive {and secretly effortless} holiday treat.

Chive Goat Cheese Rounds – makes about one dozen:
You’ll need: a small goat cheese log {about 4 oz.} | chives – 1/4 – 1/2 cup {finely chopped}
Finely chop the chives and set aside. Make rounds with the goat cheese and let them soften at room temperature for just about 5 minutes {not too long}. Roll them in the chives until they’re coated and place in the refrigerator to harden.
Spiced Candied Walnut Goat Cheese Rounds:
You’ll Need: 1 cup of spiced candied walnuts {see the recipe we posted last week} | a small goat cheese log {about 4 oz.}
Coarsely chop up about a cup of the walnuts and set aside. Make rounds with the goat cheese and let them soften at room temperature for just about 5 minutes {not too long}. Roll the rounds in the walnuts until they stick and are encrusted to your liking. Place in the refrigerator to harden.
Serve with toothpicks on their own or with sea salt grissini sticks or an herbed flat bread.
