Make it at Home: Potato Bites

Oh, the holidays. So many delicious ideas are swirling about, ready for the tasting and testing. From Aleah’s grandma’s famed Parisian wafers to classic cookies glistening with green and red sugared dust to rich cocktails adorned with cinnamon sticks and cranberries, we’re all about the tasty goodness this year {okay, when are we not?}. To us the holidays mean celebration, even in the simplest of forms. If you have guests coming over for a cookie swap or cocktails, prep easy bites that can be made quickly {or prepared well in advance with the exception of assembling}.
Our Itty Bitty Potato Bites are the perfect holiday hors d’ oeuvre. They’re easy to make and are delicious one-bite treats to serve up to your guests as they enter your holiday bash or to whip up and enjoy while watching some holiday movies.

 You’ll Need: tiny fingerling potatoes | olive oil | chives | prosciutto {crisped} | herbed goat cheese | decorative toothpicks
Preheat your oven to 350 degrees. Cut the potatoes in half and cover in extra virgin olive oil. Place on a cookie sheet and bake for about 20 minutes, or until golden, rotating half-way through.While baking the potatoes, crisp prosciutto in a pan and then crumble the pieces. Chop the chives into tiny pieces.Let potatoes cool for about 5 minutes and place {flat side down} on a decorative plate. Place a little dollop of goat cheese on top and the prosciutto on top of that. Secure with a toothpick and sprinkle chive bits on top of the plate.
