Our Ghoulish Corn Chowder
4 large potatoes {chopped} | ½ pound of bacon | 1 yellow onion {chopped} | 3.5 cups of creamed corn | 2 cups of water | 2 cups of heavy cream | 2.5 teaspoons of salt | 2.5 teaspoons of pepper
Cook bacon in a pot until crisp and remove, leaving the drippings in the pan. Crumble the bacon and set aside. Place the potatoes and onions into the pot and cook until onions barely start to brown; about 4-5 minutes. Add water, creamed corn, salt and pepper, and bacon. Bring to a boil and reduce to medium-low heat. Simmer until potatoes are soft {about 15-20 minutes}. Stir frequently. Heat up heavy cream and add to the mixture. Serve with croutons on top.
