Sunday Treat: Balsamic Glazed Ice Cream

It’s Sunday! While the weekend flew by in a flash, we managed to really enjoy it on top of the Best of San Diego Magazine bash and loads of writing and client work. Yesterday Nick whipped up his famous beach burgers {they’re just so darned tasty!} and I had a hankering for concocting a balsamic glaze to top my crushed vanilla bean ice cream, so I made a batch. Talk about the perfect little gourmet touch to ice cream, grilled fruit, a good steak, halibut, and almost anything!
Once the glaze was finished I filled up a mini bistro glass with a spoon so I could drizzle to my heart’s content. Serving up a few scoops of ice cream in bistro glasses just makes eating ice cream that much more enjoyable {it’s the little things}! Top your ice cream with a garnish of basil for a more savory treat or fresh fruit for a sweet one.
Balsamic Vinegar Glaze:
2 cups balsamic vinegar | 4 tablespoons of brown sugar
Whisk together in a saucepan and bring to a boil on medium-high heat {be careful; don’t cook it too fast or too high!}. Once it’s reached a full boil reduce to a low heat and simmer until the sauce is thick – about 20-25 minutes.
If you’re serving on steak or a protein {or grilled veggies} you can drizzle atop your meal immediately. If you’re using as an ice cream topper let the sauce cool just a bit and serve warm, not hot. Enjoy!
